These quick and easy christmas sugar cookies have nice crispy edges with soft centers. You will enjoy these cookies plain or if you want to make them more interesting, do this easy royal icing. Easy and simple and is ready in no time.

You will love making these cookies. It is a fun activity for kids. It is a quick and simple easy recipe. You will enjoy dressing up these cookies in your favorite holiday swagger. They retain their shape after baking and it is fun activity for the kids to cut the different shapes and sizes of the cookies.

All the cookies that you see here are being cut by kabir (my son) and he loved cutting the different christmas shapes.

Step by step process with pictures

In a large bowl, whist together the flour, baking powder, and salt and set them aside.

In another bowl, beat the butter and sugar with an electric beater on high speed, till the butter is smooth and creamy. This could take anywhere between 2-5 minutes.

Add the eggs and vanilla extract and beat on high speed till everything mixes well. Would take about a minute or two. Keep scraping the sides and mix it into the batter.

Now add the dry ingredients and mix well until everything is combined. If the dough is too soft and is not coming together, add a little more flour to it.

Once the dough is ready you could wrap the dough in a parchment paper and refrigerate it for 2 hours of even overnight. This step is really not important. But I prefer doing it this way as it becomes easy to play with the dough and cut the cookies.

Once refrigerated, divide the dough into 2 equal parts. Roll each part on a parchment paper to about 1/4 inch thickness. Do not be too specific on the shape of the rolled out dough as it anyways has to be cut and re-rolled and re-cut. Just make sure the thickness of the rolled out dough is even on all sides.

Preheat the Oven at 180’C. Take your cookie cutters and start cutting the dough into your favourite shapes of cookies.

Re-roll the scraps, and continue the cutting process for the entire dough. Do the same for the 2 part of the dough.

Now once the cookies are cut in the desired shapes, place them on a lined baking tray at least 2 inches apart giving them space to expand. You could even refrigerate these for around 30 minutes if your ambient temperature is hot and the butter seem to be melting.

Now bake these christmas sugar cookies for 10-12 minutes till the the edges are lightly browned. If the heating of your oven is uneven, you could rotate the baking tray in between to ensure even baking.

Allow all cookies on the baking tray for 5 minutes and then transfer to a wire mesh to cool.

Once cooled completely, decorate these delicious christmas cookies with royal icing. once the icing is cooled completely, enjoy these cookies right away. They are great for gifting or sending. Plain or decorated cookies stay good for about 5-6 days at room temperature. For longer storage, you could refrigerate them for 10 days.

How early can I make these Christmas Cookies?

These cookies stay good for about 3 months when refrigerated without the loss of any flavor. So you could make a batch somewhere late September or early October and freeze them in airtight containers to enjoy them in December.

Why are cookies too soft when out of the oven?

When baking butter cookies we do not wait for them to cook completely in the oven. If their edged are lightly browned, and getting slightly hard in the oven, take them out and let them be on the baking tray for about 5-10 minutes. They will continue to cook on the baking tray. And oven the baking tray cools down slightly, place them on a wire mesh for them to cool down completely. Once christmas cookies are cooled down completely, they will get cooked and will become hard from center.

Can I use any other flour to make these cookies?

Ideally they turn out the best with all purpose flour. But you could mix a little almond flour and wheat flour. You could even mix all the three flours like almond, wheat and all purpose. This might vary the taste a little.

Is there any substitute for Butter to make Christmas Cookies?

You could use any plant based virgin oil. But them you will have to reduce the quantity of the oil. I mean oil and butter is not a one on one replacement. In my recipe, I am using, 3/4 cup of butter. If using oil you could reduce it to 1/2 cup.

Ingredients

  • 280 gms all purpose flour

  • 1/2 tsp baking powder

  • 180 gms unsalted butter

  • 1 egg

  • 2 tsps vanilla extract

  • 1/4 tsp salt

  • 150 gms granulated sugar

Directions

  • Whisk the flour, salt and baking powder together and set them aside.
